I refuse to bang on again about the reno this month. I am over it and as we are closing in on completion, I want to keep things under my hat a bit. I must admit it has been interesting trying to come up with ideas to share this month, but as always, once you start you can usually dig out a few!
In My Kitchen were Sourdough English Muffins
I was wanting to try making something different with my sourdough starter, so I decided to try making some sourdough English Muffins.
I made these and was very pleasantly surprised with the way they turned out. Being basically lazy, for the first couple I made them square rather than round as I have no idea where my crumpet sized rings are. I actually think I’ll stick to the square shape in the future, easy to handle and fit better into the pan. These were the slightly rounder ones cooking.
I really liked the texture and gobbled one down for breakfast with butter and Vegemite. I highly recommend this recipe, although I did cut back on the sugar as I find with most recipes, they are too sweet for my liking. These would make a great breakfast addition for when you have guests stay and you enjoy a leisurely brunch. It can all be prepared a day or two ahead and you could cook them on the barbecue in bulk quantities.
In My Kitchen, an oldie but a goodie-Fried Rice.
I hadn’t made fried rice for ages and it just seemed to fit the bill for an easy Easter Meal. I think the secret to good fried rice is cooking the rice well in advance and letting it really dry out well before using it in the dish. This years planting of garlic
In My Kitchen is a little less garlic. Last week I planted out what will hopefully yield enough harvest for the following 12 months. This is the first season in a long time where I have used garlic from my own harvest for planting. For years I have been supporting Simon at Garlicworld and buying from him but I wanted to see how mine went.
In My Kitchen is a jar of honey. A special jar of honey!
Last time I went to the Warragul Farmers Market I bought this jar of honey from a very special stall-holder. The Bunyip Beekeeper is spreading some wonderful knowledge about bees and bee keeping. They offer a huge range of services including leasing of hives, training and education about beekeeping and they do some amazing swarm and hive removal/relocations. I find bees to be fascinating and they are under some heavy duty environmental threats worldwide so need all the help they can get. I love seeing someone with such passion and knowledge sharing it with others. Apparently this is one of the stronger flavours of honey they supply. Might have to make some more muffins!

Yes bees are in trouble. Its very scary indeed. I love the name of the honey though and it’s unusual buckwheat beginnings. I would love to grow garlic, i cant even imagine how you do it though. i am not a good grower just a cooker. Happy April

Your sourdough muffins look great, and I think they should be square! Thanks for the reminder about planting out the garlic. I should get it in very soon, and I will use some of our homegrown ones too.

I have been also reading about the bee problems worldwide and am planting more bee attractors this year. Is it time for the garlic to go on already? My vegie garden is a mess with leftover summer crops: must get cracking on new seeding and the garlic. Your muffins look impressive Maree.

Hi Francesca, I love bees and do everything I can to encourage them in the garden. I’m sure even though you think you are in a mess, it is actually very beautiful. These in between seasons make things look ‘unloved’ but a few hours of therapy working on them is rewarded so well (so I find). 🙂

The honey looks fantastic. Sourdough English muffins are on my to do list. Of course now with hubby potentially allergic to my starter we may have a problem!

I don’t get tired of hearing about your reno, but I understand why you might as you are living with it each day. The sourdough muffins sound delicious. I must remember to plant garlic next fall, the ones in the grocery store have been very disappointing.

Hi Liz, most store bought garlic has been treated with nasties to prevent them from sprouting on the shelf so they don’t perform well if planted. Muffins were a great success! 🙂

Ooh, your muffins look great! I’ve made crumpets before, but not muffins. My crumpets were just a little too good – especially with lashings of butter. I suspect homemade muffins would end up devoured just as quickly.

Garlic growing and keeping bees both seem to be gaining in popularity. There’s a whole garlic farm near where I live that grows dozens of different types of garlic. I’m kind of uneducated about how it varies!

Hi Mae, give planting some garlic a crack, you might be surprised at how easy it is to grow. Just stick a few cloves in the ground or a pot, pointy end up and wait, wait wait. Let me know how you go! 🙂

Thanks for the fried rice recipe. My husband used to make a great fried rice, but I never saw how he did the bits of cooked egg all through it (and stupidly never asked). Now I know.

How interesting… I hadn’t connected sourdough baking and English Muffins. I love them with butter & vegemite. And honey, once you buy good -free range- honey rather than processed, store bought it’s impossible to go back, as well as supporting beekeepers and bees.

I love English muffins. I’d love to make my own but always thought it must be difficult, I’ll have to give this recipe a go! Totally giving a thumbs up to the square shape too (much more practical!). Your homegrown garlic looks amazing!

that honey looks marvellous. i love a nice plate of eggy fried rice. hubby makes the rice absorption-method then we put it away in the fridge and it dries out nicely for fried rice. love your garlic!

Love your crumpets Maree, I have pinned your recipe for later. It’s nice to know our sourdough starters are so versatile. Mr brother-in-law has just planted a heap of his garlic from last year too, which I’ll get some for sure this year! Those sourdough muffins look amazing. I admit that I use polenta on the outside of my sourdough loaves but it would be more concentrated and delicious in muffins… it’s going on the to-make list!
Your garlic looks amazing. Here’s to a good harvest… something lovely about using your own produce isn’t there!
I’m a big fan of fried rice. It’s built into our meals plans the day after a rice meal – I make sure to cook extra rice then leave it to dry out in the fridge overnight ready to be fried up the next day 🙂

Hi Lisa! Yep, very happy with the muffins. Even with a not so hot first crack they were great so it can only get better with practice. I think the secret to the rice is that day before so it can dry out system. Cheers, Maree. 🙂
